The Funky Monkey

 This past week, my husband and I celebrated our 2nd wedding anniversary. We married a few weeks after I graduated college. Our wedding was a large affair that required lots of planning during my very busy and trying senior year. Between cake tastings, writing a senior thesis, attending millions of club meetings, and having my father unexpectedly hospitalized, I was exhausted. By the time the wedding was over, we were very ready to spend a week on the beach just decompressing.  We drove from Southern Indiana to Gulf Shores, AL, to a beautiful little beachfront condo. We spent the whole first day playing on the beach or in one of the condo swimming pools. The pool's bartender found out we were honeymooning and was quickly supplying us with twice as many drinks as we ordered. Needless to say, we had a fab time.
For this anniversary, we had a low key celebration at home. To invoke the feeling of our relaxing, beachy honeymoon, I played cabana girl and mixed up these little treats.  This is a tropical paradise in a glass! I had never had the Creme de Banana before and was afraid it would have that gross, fake banana taste to it. However, when mixed with the other ingredients it makes one fantastic summer drink. The Funky Monkey


Ingredients:

1/2 cup Creme de Banana liqueur
1/2 cup coconut rum
2 cups pineapple juice
Splash of orange juice
Ice
Shredded coconut, optional

Directions:



Combine Creme de Banana liqueur, rum, pineapple juice, and orange juice. Stir to combine. Rim glasses with shredded coconut. Fill with ice and pour liqueur mixture over it.
