
When I was a kid, I loved making those packaged mixed blueberry muffins. I think that back then, it was one of the only things I would like to bake myself. Despite my early love affair, I haven't had a muffin in I don't know how long.
Blueberry Streusel Muffins
Ingredients:
For the muffins:
1 1/2 cup flour
3/4 cup sugar
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
approx. 1/3 cup milk
1/2 teaspoon vanilla
1 cup blueberries
For the streusel toppings:
1/4 cup sugar
2 tablespoons + 2 teaspoons flour
2 tablespoon butter, cubed
3/4 teaspoon cinnamon
Directions:
Preheat oven to 400 degrees F. Line 8 muffin wells with liners and set aside.
In a large bowl, combine the flour, sugar, salt, and baking powder. In a 1 cup measuring cup combine the vegetable oil and egg. Add enough milk to reach the 1 cup mark. Add the vanilla to the oil mixture. Stir the wet ingredients into the flour mixture until combined. Gently fold in the blueberries. Fill each liner to the top with the batter.
To make the struesel topping, combine all ingredients in a small bowl and mix well with a fork until a crumbly mixture forms. Sprinkle the mixture over the top of muffins. Bake for 20-25 minutes.
